Sweet Potato Pie



+Recipe for 6 people
 ° 450g sweet potatoes
 ° 230 g of shortbread dough, i.e. 1 roll
 ° 200g caster sugar
 ° 120g milk
 ° 115g butter
 ° 100 g of eggs or 2
 ° 5 g of vanilla extract, i.e. 1 tsp
 ° 3 g grated nutmeg, i.e. 1/2 tsp
 ° 3 g ground cinnamon, i.e. 1/2 tsp


Preheat oven to 180°C.
Cook the sweet potatoes in a pan of boiling water for 40 minutes. Run them under cold water, peel them then mash the sweet potatoes in a bowl.
In the salad bowl, add the butter, sugar, milk, eggs, nutmeg, cinnamon and vanilla. Mix well to obtain a homogeneous mixture.
Unroll the shortcrust pastry in a pie dish, pour the previous preparation and bake for 1 hour. Allow the pie to cool before serving.
