This homemade Chicken Pot Pie is one of my favourite pies! It defines the ultimate comfort food. Not to mention it’s incredibly easy to whip up and so delicious, you’ll never have to buy a chicken pot pie again! Dress up your leftover turkey or chicken and make this classic pie in a snap!


Chicken pot pie crust:

1 c. cold unsalted butter cut into cubes

1 tbsp sugar

2 1/2 c. all-purpose flour

1-2 tbsp cold water

1/2 c. cold buttermilk

1 large egg beaten, for the egg wash

1 tsp salt

Pot pie filling:

3 c. shredded chicken or turkey

1/4 c. unsalted butter

1 stalk celery sliced (about ½ c.)

2 medium carrots sliced (about 1 c.)

2 cloves garlic minced

1/3 c. all-purpose flour

1 tbsp minced fresh Italian parsley

1/3 c. diced onion

1 3/4 c. chicken broth

1/2 c. heavy cream

1 1/2 tsp minced fresh thyme

1 c. frozen peas

1 tsp salt

1/2 tsp black pepper
